Saint-Saphorin At L’Onde… Dining with Jacques Tatasciore

In the very heart of the medieval village of Saint-Saphorin*, a charming winegrower’s house dating back to 1750 stands proudly. Behind its historic façade lies one of the region’s finest dining destinations.

Stepping into the Auberge de l’Onde is like following in the footsteps of Charlie Chaplin, Jean Villard Gilles, Lélo Fiaux, Jean Eicher and Géa Augsbourg...

At the crossroads of great artistic minds, the richness of its historical and philosophical heritage is deeply engraved in the very walls of this remarkable establishment.

The cuisine embraces a refined bistronomic style, with Chef Alexandre Noireaux offering a delicious, ever-evolving menu. Seasonal dishes are prepared using locally sourced ingredients, favouring the shortest possible journey from producer to plate.

The Auberge de l’Onde welcomes guests into four beautifully understated dining rooms, ranging from an intimate lounge to the impressive main dining room, La Rôtisserie.

Here, a monumental fireplace lends a unique character to the setting, allowing the chef to grill meats and poultry using traditional, time-honoured techniques. A truly captivating live-cooking experience, right before the guests’ eyes.

The service is provided by a discreet and attentive team, always ready to ensure that every guest feels perfectly looked after. I particularly appreciated the leisurely pace of our dining experience, with a beautifully balanced rhythm between wine tastings and the arrival of each course.

Indeed, the sommelier and host, Jérôme Aké Béda, is a true ambassador for Chasselas. In 2015, he was named Switzerland’s Best Sommelier by Gault&Millau.

His cellar is home to a wonderful selection of wines from Switzerland and beyond, featuring both timeless classics and lesser-known, more exclusive cuvées. He brings these hidden treasures into the spotlight during the famous Dimanches de l’Onde and special winemaker evenings.

Throughout the year, Jérôme Aké Béda invites fine wine enthusiasts to a series of themed events showcasing exceptional winemakers whose wines are often difficult to find or access.

For each occasion, a special menu is carefully crafted to complement the wines, which Jérôme takes great pleasure in presenting with his signature blend of storytelling, romance and passion – precisely the experience we are delighted to share with you.

All of this takes place in the presence of the winemaker, offering guests a rare opportunity to discover the stories, craftsmanship and personalities behind these remarkable wines.

On December 18, 2022, large round tables brought together winemakers, wine professionals, enthusiasts and passionate wine lovers, all gathered around our guest of honour, Mr Jacques Tatasciore, owner of Domaine de la Rochette and Domaine Ruedin since 2019.

A true perfectionist in the world of Swiss wine, Jacques Tatasciore produces exceptionally rare cuvées of outstanding quality, wines of remarkable elegance, finesse and distinction.

Internationally acclaimed, his wines, from Chasselas and Chardonnay to Pinot Noir, prove that Switzerland has nothing to envy its Burgundian neighbours. (The shores of Lake Neuchâtel have their own hidden gems, too!)

Like one big family gathered around the table, the dinner unfolds through fascinating conversations, enriching exchanges and shared discoveries, all in a warm and welcoming atmosphere.

* Just a stone’s throw from Lake Geneva, Saint-Saphorin lies at the foot of Mont Pèlerin, at an altitude of 400 metres, in the very heart of the Lavaux vineyards.

Ranked among the most beautiful villages in Switzerland, Saint-Saphorin is a charming little village where it is a pleasure to wander, admiring the traditional winegrowers’ houses, slipping through narrow passageways and strolling along cobbled lanes.

A walk through the village leads to its historic church, where visitors can admire the magnificent bell tower from Place du Peuplier.
