In the very heart of the medieval village of Saint-Saphorin* stands a charming winegrower’s house dating back to 1750. Behind this façade lies one of the finest restaurants in the region. Stepping into the Auberge de l’Onde is like walking in the footsteps of Charlie Chaplin, Jean Villard Gilles, Lélo Fiaux, Jean Eicher, Géa Augsbourg…

At the crossroads of great artistic spirits, the richness of its historical and philosophical heritage is truly etched into the walls. The cuisine is resolutely bistronomic, with chef Alexandre Noireaux offering a gourmet and ever-evolving menu. The dishes are seasonal, made from local products, and favour the shortest route between producer and consumer.

The Auberge de l’Onde offers a choice of four simply decorated rooms — from the intimate salon to the large La Rôtisserie dining room, where a monumental fireplace adds to the uniqueness of the setting. It also allows the chef to grill meats and poultry in the traditional way — a true live cooking spectacle right before the guests’ eyes.

In the dining room, a discreet and attentive team is at your service. I particularly appreciated our steady pace — a regular rhythm alternating between wine tastings and the serving of dishes.

Indeed, sommelier Jérôme Aké Béda, also the master of the house, is a true ambassador of Chasselas. Named Best Sommelier in Switzerland by Gault & Millau in 2015, he keeps in his cellar beautiful bottles from near and far — from essential classics to more confidential cuvées — which he showcases during the famous Dimanches de l’Onde or at winemaker evenings.

Throughout the year, Jérôme Aké Béda offers lovers of fine wines themed events that shine a spotlight on renowned winemakers whose wines are often difficult to access. For these occasions, a special menu is created to pair perfectly with the wines, which Jérôme delights in presenting with great romance and passion (and this is exactly what we want you to discover) — all in the presence of the winemaker.

On December 18, 2022, large round tables brought together winemakers, professional enthusiasts, and wine lovers around our guest of honour, Mr. Jacques Tatasciore (owner of Domaine de la Rochette and Domaine Ruedin since 2019).

A true perfectionist in the world of Swiss wine, he produces extremely rare, top-tier cuvées — elegant wines of great class. Internationally recognised, from Chasselas to Pinot Noir to Chardonnay, they rival the very best from Burgundy. (The shores of Lake Neuchâtel have their treasures too!)

Like a big family gathering, the dinner was punctuated with enriching and fascinating exchanges, all in a warm and convivial atmosphere.

Just a stone’s throw from Lake Geneva, Saint-Saphorin is located at the foot of the Mont-Pèlerin foothills (400 m above sea level) in the heart of the Lavaux vineyards. Listed among the most beautiful villages in Switzerland, Saint-Saphorin is a charming little town where one loves to stroll, admiring its typical winegrowers’ houses, slipping through narrow passageways and along cobblestone alleys to reach the church and admire its magnificent steeple from Place du Peuplier.
